  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 cup extra olive oil (for chimichurri)

Instructions

  1. Pat lamb chops dry with paper towels to remove excess moisture.
  2. In a bowl, combine olive oil, garlic powder, smoked paprika, salt, and pepper. Rub this mixture evenly over both sides of each chop.
  3. Let lamb chops rest for 10 minutes at room temperature to absorb the flavors.
  4. While the lamb rests, finely chop fresh mint and parsley, and mince the shallot.
  5. In a bowl, whisk together red wine vinegar, lemon juice, red chili flakes (if using), and olive oil. Stir in the chopped herbs and shallot. Taste and adjust seasoning. Set aside to allow flavors to meld.
  6. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  7. Place lamb chops in a single layer in the air fryer basket without overcrowding.
  8. Cook for 8 minutes, then flip and cook for another 6-8 minutes depending on thickness and desired doneness (medium-rare is usually around 14-15 minutes total). Use a meat thermometer to check for 135°F (57°C) for medium-rare.
  9. Remove lamb chops from the air fryer and let them rest for 5 minutes.
  10. Spoon generous amounts of herb mint chimichurri over the lamb chops and serve immediately.
