These crispy air fryer egg rolls are packed with savory pork and fresh veggies, delivering a golden, crunchy exterior without the grease of deep-frying. Perfect for quick snacks, appetizers, or casual get-togethers.

  • 1 pound lean ground pork
  • One 12-ounce package egg roll wrappers
  • 2 cups shredded cabbage (about 150g)
  • 1 cup shredded carrots (about 120g)
  • 3 green onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil (for sautéing and brushing)
  • 1 large egg, beaten (for sealing)
  • Freshly ground black pepper, to taste
  • Optional: pinch of crushed red pepper flakes

Instructions

  1. Heat 1 tablespoon vegetable oil in a large skillet over medium heat. Add ground pork and cook, breaking it up, until browned and cooked through, about 6 to 8 minutes. Drain excess fat if needed.
  2. Stir in minced garlic, grated ginger, shredded cabbage, shredded carrots, and sliced green onions. Cook for 3 to 4 minutes until veggies soften but remain slightly crunchy.
  3. Season with soy sauce, sesame oil, black pepper, and crushed red pepper flakes if using. Remove from heat and let filling cool slightly.
  4. Lay one egg roll wrapper flat on a clean surface with one corner pointing toward you (diamond shape). Keep remaining wrappers covered with a damp towel.
  5. Spoon about 2 tablespoons of filling onto the bottom third of the wrapper. Fold bottom corner over filling, then fold in both side corners snugly. Roll tightly toward the top corner, sealing edge with beaten egg.
  6. Repeat with remaining wrappers and filling to make about 12 egg rolls.
  7. Preheat air fryer to 400°F (200°C) for 3 minutes.
  8. Brush each egg roll lightly with vegetable oil on all sides.
  9. Place egg rolls in a single layer in the air fryer basket, leaving space between each. Cook for 10 to 12 minutes, turning halfway through, until golden brown and crispy. Cook in batches if needed.
  10. Let egg rolls cool for a couple of minutes before serving with dipping sauce.

Notes

Do not overcrowd the air fryer basket to ensure even crisping. Let the filling cool slightly before wrapping to prevent soggy or torn wrappers. Brushing with oil before air frying helps achieve a golden, crispy exterior. Flip egg rolls halfway through cooking for even browning. Leftovers reheat well in the air fryer at 375°F for 4-5 minutes. Freeze uncooked egg rolls on a tray before transferring to a freezer bag; cook from frozen adding a few extra minutes.
