A quick and easy recipe for crispy air fryer corn on the cob coated with a tangy and spicy chili lime butter, perfect as a flavorful side or snack.

  • Fresh ears of corn on the cob, husked and cleaned
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon chili powder (adjust to taste)
  • 1/2 teaspoon ground cumin
  • 2 tablespoons fresh lime juice (juice of one lime)
  • 1/4 teaspoon garlic powder (optional)
  • Salt to taste (kosher or sea salt)
  • Fresh cilantro, finely chopped for garnish
  • Pinch of smoked paprika (optional)

Instructions

  1. Husk the corn, removing all silk strands. Rinse under cold water and pat dry with paper towels.
  2. In a small bowl, combine softened butter, chili powder, ground cumin, garlic powder, smoked paprika (if using), salt, and fresh lime juice. Mix well until fully blended.
  3. Using a brush or spoon, spread the chili lime butter evenly over each ear of corn, covering all sides.
  4. Preheat the air fryer to 400°F (200°C) for about 2 minutes.
  5. Place the corn ears in the air fryer basket in a single layer. Cook for 5-6 minutes, then flip each ear using tongs and cook for another 5-6 minutes until kernels are golden and slightly charred.
  6. Remove the corn and sprinkle with freshly chopped cilantro before serving. Optionally, add an extra squeeze of lime.

Notes

If using frozen corn, thaw and pat dry before coating with butter. For dairy-free, substitute butter with vegan margarine or coconut oil. Avoid overcrowding the air fryer basket for even cooking. Preheat the air fryer for best results. Clean the air fryer basket after use to prevent residue buildup.
