  • ½ cup (60g) cornstarch
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • 1 large egg

  • ½ cup (120ml) mayonnaise
  • 23 tablespoons sriracha sauce
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon rice vinegar or lime juice

Instructions

  1. Rinse and pat dry 1 pound (450g) of raw shrimp.
  2. In a medium bowl, combine ½ cup all-purpose flour, ½ cup cornstarch, 1 teaspoon garlic powder, and ½ teaspoon salt.
  3. Beat 1 large egg in a separate bowl until smooth.
  4. Dip each shrimp first in the egg wash, letting excess drip off, then dredge in the flour-cornstarch mixture. For extra crunch, double-dip by repeating the egg and coating step.
  5. Preheat air fryer to 400°F (200°C) for about 3 minutes.
  6. Place coated shrimp in a single layer in the air fryer basket without overcrowding. Lightly spritz with cooking spray.
  7. Air fry at 400°F (200°C) for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  8. While shrimp cooks, whisk together ½ cup mayonnaise, 2-3 tablespoons sriracha, 1 tablespoon honey, and 1 teaspoon rice vinegar in a small bowl. Adjust seasoning to taste.
  9. Transfer cooked shrimp to a mixing bowl and gently toss with the bang bang sauce until evenly coated.
  10. Serve immediately, optionally garnished with chopped green onions or cilantro.
