  • 1 12-inch ball pizza dough (store-bought or homemade)
  • 1 cup (8 oz) whole milk ricotta cheese
  • 34 large garlic cloves, roasted and mashed
  • 1 cup (3.5 oz) shredded mozzarella cheese
  • ¼ cup (1 oz) freshly grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon chopped fresh rosemary or basil (optional)
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F. Wrap peeled garlic cloves in foil with a drizzle of olive oil and roast for about 15 minutes until soft. Once cooled, mash garlic into a smooth paste.
  2. In a mixing bowl, combine ricotta cheese, roasted garlic paste, salt (about ½ teaspoon), pepper, and half of the Parmesan cheese. Stir until creamy and well blended. Adjust seasoning as needed.
  3. Increase oven temperature to 475°F. On a lightly floured surface, roll out dough to a 12-inch circle about ¼-inch thick. Transfer to a parchment-lined baking sheet or preheated pizza stone.
  4. Brush dough lightly with olive oil, especially around edges. Spread ricotta mixture evenly over dough, leaving a small border. Sprinkle shredded mozzarella and remaining Parmesan on top.
  5. Bake on middle rack for 12 to 15 minutes until crust is golden and cheese is bubbling and slightly browned. Watch closely to avoid overbrowning.
  6. Remove from oven, sprinkle fresh herbs and red pepper flakes if desired, then drizzle a little more olive oil over the top.
  7. Let pizza rest for a couple of minutes before slicing. Serve warm.

Notes

If crust is soggy, pre-bake dough for 5 minutes before adding toppings. Use whole milk ricotta for best creaminess. Watch bake time closely as ovens vary. For extra crispiness, broil for 30 seconds but watch carefully. Leftovers reheat best in a skillet or oven to maintain crispness.
