  • 1 cup (8 fl oz) full-fat canned coconut milk
  • 1 ripe banana, sliced
  • 1/2 cup (4 oz) plain full-fat Greek yogurt (optional)
  • 1 tablespoon fresh lime juice
  • 1 tablespoon honey or maple syrup (optional, to taste)
  • 4 to 6 ice cubes
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Prepare the fruits: peel and chop mangoes into chunks and slice the banana. Squeeze 1 tablespoon fresh lime juice, ensuring no seeds.
  2. Add mango chunks, banana slices, coconut milk, Greek yogurt, lime juice, and vanilla extract into a high-speed blender.
  3. Sweeten to taste with honey or maple syrup if desired.
  4. Add 4 to 6 ice cubes to the blender.
  5. Pulse a few times to break up the ice, then blend on high speed for about 60 seconds until smooth and creamy. Scrape down sides if needed.
  6. Check consistency and flavor; add more coconut milk if too thick, or more banana/ice cubes if too thin. Adjust sweetness or lime juice as preferred.
  7. Serve immediately in chilled glasses, optionally garnished with a mango wedge or shredded coconut.

Notes

Use ripe mangoes for best sweetness; frozen mango or banana chunks can be used for a thicker, colder smoothie. Adjust sweetener sparingly as mango is naturally sweet. Keep ingredients cold to avoid a warm smoothie. For vegan options, substitute Greek yogurt with plant-based yogurt and honey with maple syrup.
