  • Salt and pepper, to taste
  • 2 tablespoons olive oil (extra virgin recommended)
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil preferred)
  • 1 cup low sodium chicken broth (240 ml)
  • 3/4 cup heavy cream (180 ml)
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful of fresh basil or parsley, chopped (for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper. (About 5 minutes)
  2. Place your skillet on medium-high heat and add the olive oil and butter. Wait until the butter melts and starts to bubble but doesn’t brown. (2 minutes)
  3. Add the chicken breasts to the pan, laying them away from you to avoid splatter. Cook undisturbed for 5-6 minutes until golden brown on one side. Flip and cook the other side for another 5 minutes. The chicken should be mostly cooked but not fully done. (10-12 minutes)
  4. Transfer the chicken to a plate and tent with foil to keep warm. (1 minute)
  5. Lower heat to medium. Add minced garlic and chopped sun-dried tomatoes to the pan. Stir frequently for about 1-2 minutes until fragrant and softened. (2 minutes)
  6. Pour in the chicken broth, scraping the bottom of the pan to loosen any browned bits. Let it simmer and reduce slightly for about 3 minutes. Then stir in the heavy cream and bring to a gentle simmer. (5 minutes)
  7. Stir in the grated Parmesan cheese and red pepper flakes (if using). The sauce will thicken beautifully. Taste and adjust seasoning with salt and pepper as needed. (2 minutes)
  8. Nestle the chicken breasts back into the creamy sauce. Cover the pan with a lid and let everything simmer gently for 5-7 minutes until the chicken reaches an internal temperature of 165°F (74°C). (7 minutes)
  9. Turn off heat and sprinkle chopped basil or parsley over the top for a fresh, vibrant finish. (1 minute)
  10. Spoon the creamy sauce over the chicken and enjoy immediately.

Notes

If the sauce gets too thick, add a splash of broth or cream to loosen it. Use a meat thermometer to ensure chicken reaches 165°F (74°C). For dairy-free, substitute heavy cream with coconut cream and omit Parmesan or use dairy-free cheese. Avoid burning garlic by cooking it low and slow. Freshly grated Parmesan melts better than pre-grated.
