Instructions

  1. Combine graham cracker crumbs and melted butter in a mixing bowl until mixture resembles wet sand.
  2. Press the crust mixture evenly into the bottom and up the sides of a 9-inch pie pan, about 1 inch high.
  3. Freeze the crust for 10 minutes to set.
  4. Beat softened cream cheese until smooth in a large bowl.
  5. Slowly add sweetened condensed milk while mixing until blended.
  6. Add fresh lemon juice and beat until mixture thickens slightly and has a glossy finish.
  7. Pour the filling over the chilled crust and smooth the top with a spatula.
  8. Cover loosely with plastic wrap or foil and freeze for at least 4 hours or overnight until firm.
  9. Before slicing, let the pie sit at room temperature for 10 minutes to soften slightly for cleaner cuts. Use a hot knife dipped in warm water for neat slices.
