A simple and comforting slow cooker recipe featuring tender chicken breasts in a creamy garlic and sun-dried tomato sauce with fresh spinach. Perfect for busy weeknights with just 5 main ingredients.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • 1/2 cup chopped sun-dried tomatoes (packed in oil)
  • 3 cups fresh spinach, loosely packed
  • 4 ounces cream cheese, softened
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Pinch of Italian herbs (optional)

Instructions

  1. Rinse and pat dry the chicken breasts. Season lightly with salt and pepper.
  2. Place the chicken breasts in a single layer at the bottom of the crockpot.
  3. In a bowl, combine softened cream cheese, minced garlic, and chopped sun-dried tomatoes. Stir until creamy and spreadable.
  4. Spread the cream cheese mixture evenly over the chicken breasts.
  5. Cover and cook on low for 4 to 5 hours or until the chicken reaches an internal temperature of 165°F (74°C).
  6. About 15 minutes before serving, stir in the fresh spinach. Cover and let it wilt in the residual heat.
  7. Taste and adjust seasoning with salt and pepper if needed. Serve hot.

Notes

If the sauce is too thick, add a splash of water or chicken broth during cooking. To thicken, remove the lid for the last 20 minutes. Use fresh garlic for best flavor and soften cream cheese before mixing to avoid lumps. Add spinach last to keep it vibrant and not mushy. Chicken thighs can be used instead of breasts with adjusted cooking time. For a stovetop version, simmer on low with a tight lid.
