  • 1/2 cup (120ml) milk (dairy or plant-based like almond or oat milk)
  • 1 ripe banana, mashed
  • 1/4 cup (60g) Greek yogurt (or coconut yogurt for dairy-free)
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg (optional)
  • 1 tablespoon chia seeds
  • 12 tablespoons cooled espresso or strong brewed coffee
  • 1 tablespoon milk or cream (for espresso drizzle)

Instructions

  1. Mash 1 ripe banana in a mixing bowl with a fork until mostly smooth with a few small lumps remain (about 2 minutes).
  2. Add 1/2 cup (120ml) milk, 1/4 cup (60g) Greek yogurt, 1 tablespoon maple syrup or honey, and 1/2 teaspoon vanilla extract to the mashed banana. Stir until smooth and well combined.
  3. Stir in 1/2 cup (45g) rolled oats, 1 tablespoon chia seeds, 1/2 teaspoon cinnamon, and 1/8 teaspoon nutmeg. Mix thoroughly so oats are evenly coated and spices well distributed (about 1-2 minutes).
  4. Spoon the mixture into a mason jar or airtight container. Seal tightly and refrigerate overnight or at least 6 hours to soak and thicken.
  5. Just before serving, whisk together 1-2 tablespoons cooled espresso with 1 tablespoon milk or cream in a small bowl until smooth and pourable.
  6. Remove oats from fridge, stir if desired, and drizzle the espresso mixture on top. Optionally sprinkle a pinch of cinnamon or chopped nuts for extra texture.

Notes

Use ripe bananas with brown spots for natural sweetness. Use old-fashioned rolled oats for best texture. Add espresso drizzle just before serving to keep coffee flavor fresh. For dairy-free or vegan, substitute Greek yogurt and milk with plant-based alternatives. If oats are too thick in the morning, add a splash more milk. Blending the mixture before refrigerating can create a pudding-like texture.
