A warm, comforting breakfast casserole combining cinnamon rolls soaked in a lightly spiced custard and baked to golden perfection with a sweet glaze on top. Perfect for cozy mornings and easy to prepare.

  • 1 package store-bought cinnamon rolls (about 9 rolls), classic or cream cheese frosted recommended
  • 6 large eggs, room temperature
  • 2 ½ cups (600 ml) whole milk or 2% milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ cup (50 grams) brown sugar
  • Pinch of salt
  • ½ cup (60 grams) powdered sugar
  • 23 tablespoons milk or cream (for glaze)
  • Cinnamon (optional, for sprinkling on glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish lightly with butter or non-stick spray.
  2. Cut each cinnamon roll into 4 pieces.
  3. Arrange the cinnamon roll pieces evenly in the baking dish, leaving some space between pieces.
  4. In a large mixing bowl, whisk together eggs, milk, vanilla extract, ground cinnamon, brown sugar, and a pinch of salt until smooth.
  5. Pour the custard evenly over the cinnamon rolls. Gently press down to help the rolls absorb the custard. Let sit for 10 minutes to soak.
  6. Bake uncovered for 35-40 minutes until the casserole puffs up and edges are golden brown. A toothpick inserted should come out mostly clean with a few moist crumbs.
  7. While baking, prepare the glaze by mixing powdered sugar with milk or cream until smooth but thick enough to drizzle. Add a pinch of cinnamon if desired.
  8. Remove casserole from oven and let cool for 5-10 minutes. Drizzle glaze generously over the top.
  9. Serve warm, cut into squares.

Notes

Use room temperature eggs and milk for better custard soaking. Do not overcrowd the baking dish to allow even cooking. Let the rolls soak for 10 minutes before baking to avoid dryness. Customize glaze thickness by adjusting milk or powdered sugar. For dairy-free or gluten-free options, substitute milk and cinnamon rolls accordingly. Overnight assembly is recommended for convenience.
