These comforting Sloppy Joe sliders with cheddar cheese are quick, easy, and perfect for game day snacks. They combine savory ground beef in a tangy tomato sauce with melted sharp cheddar on toasted slider buns for a crowd-pleasing treat.

Ingredients

Scale
  • 1 pound ground beef (80/20 preferred)
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce (plain, no sugar added)
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder
  • Salt and black pepper, to taste
  • 6 ounces sharp cheddar cheese, sliced or shredded
  • 12 slider buns

Instructions

  1. Prepare the Ingredients (5 minutes): Finely chop the onion and mince the garlic. Slice or shred the cheddar cheese and set aside. Have your slider buns ready to toast later.
  2. Cook the Beef and Onions (8-10 minutes): Heat your skillet over medium-high heat. Add the ground beef and cook, breaking it up with your spoon, until it starts browning but isn’t fully cooked—about 4 minutes. Add the chopped onions and garlic, stirring to combine. Keep cooking until the beef is fully browned and onions are translucent.
  3. Add the Sauce Ingredients (5 minutes): Stir in the tomato sauce, ketchup, Worcestershire sauce, brown sugar, chili powder, salt, and pepper. Reduce heat to medium-low and let the mixture simmer gently for about 10-12 minutes until it thickens slightly. Stir occasionally to prevent sticking.
  4. Toast the Slider Buns (3-5 minutes): While the sauce simmers, preheat your oven’s broiler or a grill pan. Place the buns cut side up and toast just until golden brown. Keep a close eye—they burn fast!
  5. Assemble the Sliders (5 minutes): Spoon the beef mixture generously onto the bottom halves of the buns. Layer with slices or shreds of sharp cheddar cheese, then cap with the toasted bun tops. If you like, return assembled sliders to the oven for a minute to melt the cheese perfectly.
  6. Serve Warm: These sliders are best enjoyed fresh, with napkins handy for that delicious messiness.

Notes

Simmer the sauce until thick but not dry to avoid soggy buns. Add cheese at the end for melty texture. Toast buns just before assembling for best texture. Adjust seasoning to taste. Leftover beef mixture can be refrigerated for up to 3 days or frozen for up to 3 months. Avoid freezing assembled sliders to prevent soggy buns.
