  • 1 1/2 cups (360 ml) strong brewed espresso, cooled
  • 2 tablespoons coffee liqueur (optional)
  • 24 ladyfinger cookies (savoiardi)
  • Unsweetened cocoa powder, for dusting

Instructions

  1. Brew 1 1/2 cups (360 ml) of strong espresso and let it cool to room temperature (about 15 minutes). Stir in 2 tablespoons of coffee liqueur if using. Set aside.
  2. In a large chilled mixing bowl, whip 1 cup (240 ml) of cold heavy cream until soft peaks form (3-5 minutes on medium speed). Do not overbeat.
  3. In another bowl, whisk 3 large egg yolks with 1/2 cup (100 g) granulated sugar until pale and slightly thickened (about 3-4 minutes). Add 1 teaspoon vanilla extract and 8 oz (225 g) mascarpone cheese, gently folding until smooth.
  4. Fold the whipped cream into the mascarpone mixture gently using a spatula until fully combined and airy.
  5. Quickly dip each ladyfinger cookie into the coffee mixture for 1-2 seconds per side. Arrange a single layer of soaked ladyfingers in a 9×9 inch (23×23 cm) dish.
  6. Spread half of the mascarpone cream mixture evenly over the ladyfingers.
  7. Repeat dipping and layering with the remaining ladyfingers, then top with the rest of the mascarpone mixture.
  8. Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  9. Just before serving, dust the top generously with unsweetened cocoa powder using a fine sieve or strainer.

Notes

Use fresh or pasteurized eggs for safety. Chill mixing bowls before whipping cream for better texture. Dip ladyfingers quickly (1-2 seconds) to avoid sogginess. Let tiramisu chill at least 4 hours or overnight for best flavor and texture. Dust cocoa powder just before serving to avoid wetness.
